Whole Chicken with Saffron – Murgh Musallam
Posted by HashHi all you desi chicken lovers, here is another sizzling hot recipe from the vast expanses of the subcontinent. This time its a rich preparation of whole chicken with saffron and roasted spices. Yummy, I can see you drooling! Here we go..
INGREDIENTS:
1 x Chicken large size
1 x Med Onion
4 x Dry red chilies
1 Tbsp. Cumin seeds
1 Tbsp. Coriander seeds
1 Tbsp. Aniseed
4 Tbsp. Roasted gram dal
4 x Cloves
4 x White cardamoms
2 x Black Cardamoms
½ Tbsp.Whole black peppers
1 x Pinch Saffron
3″ Piece of Coconut
2 x Almonds
½ Pint Yogurt
6 Tbsp. Oil/Ghee
Salt To taste
INSTRUCTIONS:
- First, peel and slice the onion.
- Soak the pinch of saffron in a spoonful of hot water and set aside.
- Now put all the remaining spices in a frying pan and dry roast for a minute or two, without any fat and then grind them together.
- Heat half of the oil/ghee in a large saucepan and put the whole chicken in. Brown the chicken on all sides.
- Remove chicken, and pour in the remaining oil/ghee.
- Fry onions till they are brown, add the ground spices and ground coconut and fry for another 5 minutes
- Put the chicken back into the pan and add the yogurt blended with 1.5 Ltrs of water and salt.
- Cover tightly and cook till liquid dries and the chicken is tender.
- Just before serving add saffron water and garnish with chopped almonds.
- Serve with Naan/Chappati or anything you fancy.
