Mutton Curry with Whole Spices - Mutton Dopiaza

Mutton Dopiaza (double dose of onions) is a main course meal prepared very often at festivals. Mutton pieces cooked with whole spices, onions and yogurt turn in to mouth watering main course.

INGREDIENTS:
* 500 Gms. Mutton
* 500 Gms. Onions
* 4 Nos. Cardamoms
* 6 Nos. Cloves
* 1/2″ Piece of Ginger
* 1″ stick of Cinnamon, broken into small bits
* 1 Tsp. Garam masala
* 1 Tsp Chili powder.
* 1 Tsp. Cumin seeds, ground
* 1 Tbsp. Coriander powder.
* Salt To taste
* 400 Gms. Yogurt, whisked
* a Small bunch of Coriander leaves
* 4 Tbsp. Ghee

INSTRUCTIONS:
1. Grind onions, ginger, garlic to form a paste.
2. Heat 4 tbsp ghee/oil and fry the paste till it is golden brown in colour.
3. Add the mutton and the whole spices and fry it till it turns medium brown evenly.
4. Now add the yogurt, coriander powder, ground cumin seeds, salt and chili powder.
5. Cover with lid tightly and cook over a low heat till the mutton is tender and all the moisture is gone.
6. Than fry for a while till the ghee separates from the masala.
7. Garnish with freshly chopped coriander leaves and a pinch of garam masala.
8. Serve hot with Chappatis/Naan bread, Mint Chutney and salads of choice.
